Greek potatoes - vegetable - pot

Preparation
Put some oil in a saucepan. Peel the onions and chop finely. Peel garlic and chop coarsely. Fry both in oil until translucent. Add tomato paste and cook briefly. Dice the bacon and add it to the mixture. Fill out the green beans, then place the potatoes in the pot.
Peel or brush the peppers and tomatoes and add them in the saucepan. Stir occasionally, and sprinkle the whole thing with wine. Add the thyme and bay leaf and pour in the water scarce. Add salt and pepper and cook gently, covered for 20-30 minutes (depending on how you prefer the vegetables, al dente or well-cooked).
Wash and chop the parsley. Season to taste at the end of the stew, taste, sprinkle with parsley and leave.
Tip: If want you can add other vegetables too, eg Carrots according to taste.
